Apple and Almond Cake

This is my favourite gluten free cake.. so far! Here’s how to make it

- Pre-heat the oven to 180 and line a 22cm square baking tin with baking parchment
- Have 320g apples peeled and chopped at the ready
- Put 150g of unsalted butter into a small pan and melt gently whilst you get the remaining ingredients ready
- In a mixing bowl measure out:
200g Doves gluten free plan flour
50g ground almonds
225g golden caster sugar
2 tsp baking powder
1 tsp almond oil
2 large eggs
- add the melted butter to the mixing bowl and mix until you have a smooth batter (I use a stand mixer)
- Mix the apples into the batter using a wooden spoon and then scrape into the tin
- Scatter over a few handfuls of flaked almonds
- Bake in the oven for approx 40 minutes, the cake should look golden and be coming away slight at the edges
