Apple compote (speedy)
Glut of cooking apples? Tired of peeling? This could be the recipe for you…
Take 3 cooking apples and chop roughly, leaving the skin on. Pop into a saucepan with two tsp of ground cinnamon and a splash of water. Cook gently until the apples are soft. Store in a ceramic bowl in the fridge and use over several days.
We have been having this for breakfast with Greek yoghurt and a generous scattering of flaked almonds. I also tried mixing the compote with flax or chia seeds for extra fibre. Really anything goes.
