Flatbread
I’m not sure if this is strictly bread, but it is a lot nicer (and easier to make!) than several gluten free bread recipes I have tried. Works well with curries to mop up the tasty sauce. I’m having mine with chicken shawarma tonight (post on that to follow).
Simply combine the following ingredients a stand mixer…
250g Greek yogurt
100g coconut flour
100g ground almonds
2 tsp psyllium husk powder
Generous few pinches of sea salt
Mix until well combined and then add 4 - 6 tbsp of water and use your hands to bring it together into a big ball.
Break off a piece (slightly smaller to a the size of a tennis ball) and flatten it with your hands on a plate or wooden board. Fry in butter for few minutes on each side.
