Gluten free packed lunch
This recipe is from a few weeks ago, using up the penultimate russet apple (only the cookers remain). It is a core skill of the gluten free to assemble a tasty, filling and largely unplanned packed lunch from the contents of the fridge. Although in truth the (not) planning starts the night before when you make sure to roast extra vegetables etc so as to have something worthwhile from which to scavenge in the fridge.
This particular packed lunch was assembled as follows…
- leftover roasted butternut squash
- One cooked beetroot and one fresh russet apple chopped roughly into cubes
- leftover, shredded roast chicken
- a sprinkle of pine nuts and some flat leaf parsley
- finished off with a generous dollop of cottage cheese
Enjoy a day out and about without the fear of cross contamination or the anguish of being judged for not having a positive coeliac result.
