Salmon, chorizo and apple salad

Another tasty, gluten free lunch using leftovers and (of course) apples! In a large bowl combine:
- handful of baby spinach
- handful of cherry tomatoes
- leftover roast veg (butternut squash and courgette in this instance)
- leftover salmon fillet crumbed into smaller chunks
- a few big chunks of chorizo sausage cut into smaller pieces
- one small russet apple, thinly sliced
- toss with olive oil and vinegar
- sprinkle with pumpkin and sunflower seeds (and maybe a few flaked almonds)
